Yumminess: Chocolate Chip Cookie Dough CUPCAKES

So I love to bake…no hiding that.  However, when I bake, I’m going to eat ALL of whatever I make, so I haven’t been doing that lately because I don’t have anyone to pawn my goodies off on on a regular basis.  I don’t feel comfortable taking them to work for whatever reason.  Anyway, I overcame my fears this weekend with a fantastic result.

I love chocolate chip cookies…and cookie dough!  My favorite ice cream is chocolate chip cookie dough (especially of the Turkey Hill variety), so what could be better than chocolate chip cookie dough cupcakes?  If your answer is “nothing,” then you would be correct.  Read on for the deliciousness.

I’m not that creative, so I scoured the internet for some recipes…yum!

Chocolate Chip Cookie Dough Filling and Icing

For the cookie dough filling, I headed over to the Cupcake Project to steal the eggless recipe, which allows you to have a chewy center and cookie dough frosting without any raw egg.  Sounds good to me!  For the frosting, all you do is take a cup of the filling and mix it with a half cup of heaving whipping cream.  Spreadable yum!

  • 2 C all-purpose flour
  • 1/2 t salt
  • 3/4 C unsalted butter, melted
  • 1 C packed brown sugar
  • 1/2 C white sugar
  • 1 T vanilla extract
  • 4 T milk
  • Mini-chocolate chips to taste
  • Throw everything into a bowl and mix!  As as pie cupcake!

    I recommend freezing the dough before baking it to help it maintain its “chewiness” instead of baking.  A nice surprise in the middle.

    Vanilla Cupcakes

    Now, you could safely use a vanilla (or chocolate, whatever) cupcake mix from a box, but where’s the fun in that?  I went searching for a super yummy vanilla cupcake recipe.  Success was found over at BURP!  Where Food Happens.

    • 1 1/2 sticks unsalted butter
    • 1 1/2 cups sugar
    • 2 eggs
    • 2 teaspoons pure vanilla extract
    • 2 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 2 1/2 cups flour
    • 1 1/4 cups milk

    Heat oven to 375 degrees F.


    Put butter in mixer and beat at medium speed until somewhat smooth. Pour in sugar and beat well. Add 2 eggs.  Mix well. Add: vanilla, baking powder, salt, flour, and milk. Beat it!

    Cupcake Assembly

    This is where I had to experiment.  Do I just fill the cupcake liners like normal and then drop the cookie dough in the center?  Fill halfway, drop the cookie dough in the center, and then top with some more batter?  Well, after my experiment, I would recommend the first method.  The cookie dough ball drops to the bottom anyway, and the batter bakes around it.  It may poke out the top a little, but it looks cute too.

    The result?  Yum!!  HIGHLY recommend this recipe.  So tasty and a definite crowd pleaser.
